Pork Chops

Ingredients

Ingredients

  • 2 tablespoons canola oil Six 6-ounce boneless center-cut pork chops, trimmed of any fat 1 teaspoon Dijon mustard 1 tablespoon red-wine vinegar 2 tablespoons light-brown sugar 1 tablespoon Worcestershire or soy sauce 1 teaspoon garlic salt Sprigs fresh parsley, for garnish

Directions

Heat oil in a large heavy-bottomed skillet over medium-high heat. Brown pork chops on all sides, 2 to 3 minutes per side.

Meanwhile, in a medium bowl, stir together mustard, vinegar, sugar, Worcestershire sauce, and garlic salt with 1/3 cup water. Pour over pork chops. Reduce heat, cover, and cook until tender, about 1 hour.

Transfer pork to a serving platter. Raise heat to medium-high and cook sauce until thickened, about 5 minutes. Pour sauce over pork chops; garnish with parsley and serve immediately.

Martha Stewart Member Rating: 5 stars 03/28/2019 I doubled the sauce recipe and it was perfect. Be sure to watch the time and check a couple of times in case the sauce is evaporating too fast. I burned one pan using thin pork chops. Different pans cook at different rates, too.

Martha Stewart Member Rating: 1 stars 05/15/2018 I was looking for a bit of a pick-me-up for my usual braised pork chops. These were overcooked in less than 30 minutes. I have made braised pork chops many times over the years by coating the pork chops in seasoned flour, browning, adding only 1/4 c of liquid i.e. water, wine, or apple juice for 4 chops. I couldn't believe it was right the first time I made it. Believe it! It's the perfect amount. Cover on low for JUST 20 minutes. Voilà!

Martha Stewart Member Rating: Unrated 02/06/2011 Wonderful! Very easy. I agree with other comments - double the liquid or at least add more water - it will cook out anyway.

Martha Stewart Member Rating: Unrated 10/06/2008 I've made these many times since first seeing the segment on the show. I also double the recipe for the liquid. These pork chops come out so tender and delish!

Martha Stewart Member Rating: Unrated 04/30/2008 When I tried this recipe, I doubled the recipe for the braising liquid. I couldn't imagine how so little liquid would last an hour even at the lowest simmer. They turned out great and there was a little sauce for the chops at the end. I've recommended the recipe to several friends, noting my adjustment, of course! Give these another try!

Martha Stewart Member Rating: Unrated 04/28/2008 I tried this - sounded great - but the water mix was completely gone after 30 minutes and burnt!! Is the timing in step 2 correct?
