Simple and classic. One can really taste the coconut flavor. No need for the toasted shavings. Did add a little chopped cilantro.

Coconut-Water Rice Using a Pressure Cooker (p-cooker)
Please be sure to follow all p-cooker maker's instructions.
Add 1 cup rice into a stainless steel bowl, that fits loose in p-cooker.
Add 1 1/2 cups coconut water.
Seal bowl with aluminum foil.
Prepare p-cooker with rack and 2 cups H2O.
Put sealed bowl into cooker.
A Presto 6-qt. calls for 8 minutes cooking after regulator starts rocking.
Allow cooker to cool down of its own accord.
Delicious rice I will serve with seafood or veggies.

Directions
Replace tap water with the same amount of coconut water to cook rice. For even more coconut flavor, stir in a handful of toasted unsweetened coconut flakes.
