  • 3/4 cup pecans (3 ounces)
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup (2 sticks) unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed light-brown sugar
  • 2 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 1/2 cups old-fashioned oats (not instant or quick-cooking)
  • 6 ounces semisweet chocolate, cut into 1/4-inch chunks
  • 1/2 cup shredded unsweetened coconut
  • Vegetable-oil cooking spray

Directions

Preheat oven to 350 degrees. Spread pecans in a single layer on a rimmed baking sheet. Toast in oven, tossing occasionally, until darkened and fragrant, 10 to 13 minutes. Let cool, then coarsely chop. Into a bowl, sift together flour, baking soda, salt, and baking powder.

With an electric mixer on medium-high speed, cream butter and both sugars until pale and fluffy. Reduce speed to medium. Addeggs, one at a time, beating well after each addition. Beat in vanilla.

With mixer on low speed, gradually add flour mixture, beating until just incorporated. Beat in oats, chocolate, pecans, and coconut until just combined. (Dough can be covered with plastic and refrigerated up to 3 days.)

Coat baking sheets with cooking spray; line with parchment, and spray parchment. Using a 1 1/2-inch ice-cream scoop or a tablespoon, drop dough onto prepared sheets, about 3 inches apart.

Bake, rotating sheets halfway through, until edges of cookies begin to brown, 16 to 18 minutes. Transfer sheets to wire racks to cool 5 minutes. Transfer cookies to racks to cool completely. Cookies can be stored up to 3 days at room temperature in airtight containers

                My mom has been making these cookies for YEARS... every since I was a little girl.... and I am 43 years old now!  They are wonderful.  We usually also would add raisins in them for an even chewier cookie.  We also used chopped walnuts instead of the pecans.  ALWAYS A FAMILY FAVORITE!!

                I love these cookies! Unfortunately, though, I forgot the main ingredient, coconut, which was the reason I tried the recipe in the first place. However, even without the coconut, they have a great flavor, and the oatmeal makes them somewhat chewy inside and crunchy outside. It was a mistake that still had a happy ending!

                Timing is way off... toasting nuts took 7-8 minutes and the cookies maybe 10.  Yummy and versatile recipe otherwise.  I used sweetened coconut, margarine and mini chocolate chips cause that's what I had on hand.  Great tasting!

                These cookies tasted great but there are a few issues. The prep time is too short, the cooking time is too long and I only got 3 dozen not 5. I trusted this recipe - when I make them next time I'll know better.

                One of my favorites!  I mix up the kinds of chocolate that I use--milk, dark, and semi-sweet as well as the kind of nuts--almonds, walnuts, and pecans all in the same batch!  SO good!

                This is a great cookie. I made them up, balled them, rolled them in Turbinado Sugar, and froze  half of them in ziplock bags. Bakers Doz in each bag. Did them up tonight and there bout gone. I will freeze them up again too. Makes fresh cookies lots less work.

                Wow! These are really delicious cookies. I used walnuts because that is the nut I had. I also added chopped dried cherries to the batter when I added the nuts and coconut. Mmm, mmm good. All you need is a cold glass of milk. Thank you for the recipes. The name is great-Cowboy Cookies.

                Question: has anyone cut the butter in this recipe with shortening?  I've seen lots of Cowboy Cookie recipes with half butter half shortening.  I'm making them tonight irregardless, but I wondered if I should experiment =)

                I just made cowboy cookies today using my mother-in-law's recipe. It's about the same as this one but everything was doubled. My family says the reason why you can store for only 3 days is...they are usually all gone by then. :)

                Most of the recipes for cookies say...will keep for three days...why
                the magical number of 3?  Mine keep in a covered contained for
                longer and of course, freezing always works on all cookies.l
                Oh yes, prep time 5 minutes???  Not on your life.  It takes 5 minutes
                just to get the ingredients assembled.  At least we finally got
                a cookie recipe for cookie of the day.

                Cookies were GREAT!  My family does not like the texture of coconut, so I chop it real fine in the food processor.  You get the taste but not texture.

                To: rsvoboda - you can get a "printer-friendly" version by clicking on "print" (between the recipe title and recipe photo).  A version without the ads should appear on your screen and you can print that.  Don't know what operating system you have but you can also click on the arrow next to the printer icon on your toolbar and preview what the printed version will look like and adjust the size before you print.  I usually use 125% for most Martha recipes.

                I noticed one person asked about printer version of this recipe.  In fact, every Martha Stewart idea online has a printer version.  Above the recipe or idea there is a menu line with the words save, rate, print, email.  Just click on print and there is your printer version.  I use it all the time and it works great.  I've created a notebook full of ideas that I find on this website.  In fact, I purchase  printer paper with the holes already in it and it's perfect, no other work to do.

                To make a "printer-friendly" copy of recipe, just highlight the recipe (right click on mouse and hold it down) then paste into notepad, or wordpad or word.
                
                You have to add the title of the recipe to it, it's not a very pretty-looking recipe, but there are no ads.

                Anyone wonder why these recipes don't have a printer-friendly version?  I love the recipes, but waste all my ink on the advertisements.  They should offer recipe cards version in 2 sizes like foodnetwork.  Just a thought!

                I miss out on a lot of baked goods since I'm lactose intolerant.  But in this recipe, for my fellow Milk-Lusters, use carob instead of semi-sweet chocolate and vegetable shortening for unsalted butter.  
                
                And just to pass up on all the un-free trade issues and GMO, bleached, modified junk, I just normally go ahead and use ingredients from my local health food store to know that I'm doing good to more than just my taste buds.  So healthy yummy!  ;)

                such a great recipe! i was able to make them vegan and organic, by using all organic ingredients and substituting the egg with egg replacer, the chunks of chocolate with vegan carob chips and the butter with vegan earth balance butter. they tasted great and were healthful! Yee-haw for cowboy cookies!

                These cookies are delicious. I am very picky about choc. chip cookies. They have to be moist but not greasy. These are GREAT. And, true to the recipe, you get exactly 5 dozen. I will make these again and again.

                I remember when I was traveling through Texas some time ago I found this similiar recipe on a postcard - except it was called 'Texas Cow Chip Cookies'.  There were peanut butter chips in addition to chocolate chips, bran flakes cereal and it was double the amount of ingredients as you made them huge using 1/4c measuring scoop (is that the same size as 1-1/2in ice cream scoop).  They were and continue to be a hit whenever I make them.

                My comments weren't so flattering I'm afraid. The grandkids didn't like the coconut bits, and they didn't like the way the oats stuck to their teeth. However they did like the nuts but not so much the chocolate chunks. I had to remind them Grandma made them and if they wanted more of other kinds they better rate them higher. They gave them a thumbs up.
