Ingredients

  • 3 cups sugar
  • 3 cups all-purpose flour
  • 1 1/2 cups unsweetened cocoa powder, plus more for pans
  • 1 tablespoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons salt
  • 1 1/2 cups buttermilk, room temperature
  • 3/4 cup vegetable oil
  • 3 large eggs
  • 1 1/2 teaspoons pure vanilla extract

Directions

Preheat oven to 350 degrees. Line standard muffin cups with paper liner. In a large bowl, whisk together sugar, flour, cocoa powder, baking soda, baking powder, and salt. Add buttermilk, vegetable oil, and 1 1/2 cups warm water; whisk to combine. Add eggs and vanilla extract and whisk until smooth.

Divide batter among muffin cups (filling each about 2/3 full) and bake until a toothpick inserted in center of cupcake comes out with a few moist crumbs attached, 20 to 25 minutes. Let cool in pans on wire racks, 5 minutes, then transfer cupcakes to racks and let cool completely. Frost as desired.

                Very rich chocolate flavor!  Easy to make .  I reduce reduce down to 2 dozen cupcakes. I frost them with Chocolate ganache.  My husband loves them.

                For some reason my iPad wouldn't let me click on 5 stars but I would. This is my go-to recipe for birthday cakes/cupcakes! Everyone goes crazy for them! Because of all of the sugar, they barely need frosting. I just use frosting in a jar for my kids vs going to the trouble of making butter  cream. Everyone always wants the recipe 😋

                Great result every time, I love how light they are and the chocolate flavor is the perfect balance. Also the recipe is easy to divide into smaller batches. My 3 year old loves to help me make these they are that uncomplicated.

                I made these cupcakes this morning. The taste was great, only they were a little too moist. I believe that was because I baked them at a lower temperature?

                Excellent result, my second time ever making cupcakes so I didn't even know you could use oil, not need a fancy mixer and I was skeptical when I read to add water but I just did as instructed and it was perfect. The ingredients were super simple, I made buttermilk with regular milk & lemon juice as a DIY place filler, I found the recipe online. What a hit! Easy to divide  by three for just 12 cupcakes as I did.

                Isn't 3 cups a sugar a bit too much? I made cupcakes using this recipe and they came out horrible and hard and very very sugary.

                I've made these last week for a friends birthday. It was perfect, especially with my homemade salted caramel frosting, it really compliments each other. I did 2 other frosting which are lemon orange and barcardi flavoured. Salted caramel frosting is well liked by all.

                These Easy One-Bowl Chocolate Cupcakes are awesome Sarah!  Even my husband said, that they are delicious!  Now for the "Swiss Buttercream Icing"  What's the secret, it turned out as a flop!

                This proved to be super easy and extra yummy.  We made it in cooking class yesterday and the kids loved it.  Also we did the frosting and it swirled....yeah.  But I would not use a zip lock bag, it burst after the first cupcake.  But it still was extra cool!

                These cupcakes are delicious!  I added the warm water and was a bit skeptical because the batter was very runny (I'm used to very thick batter and resulting very dense cupcakes) but the cupcakes came out great. Very light but not at all dry - very moist. I used Martha's recipe for Billy's chocolate buttercream (adding a teaspoon of almond extract to make it chocolate almond buttercream).  Delicious! My boyfriend inhaled them!

                These cupcakes are fantastic! I made them for my sister-in-laws birthday and frosted them with a chocolate/white buttercream swirl as suggested. One thing I noticed though, the 1 1/2 c warm water added in the video is not in the recipe. I was glad I watched the video or I would have ended up with thick, brownie like cupcakes instead of moist, cake ones;)
