Directions

Place all ingredients except lettuce in a large bowl; gently toss until well combined. Serve wrapped in lettuce leaves.

I left an avacado seed in there so the avacados wouldn't go bad and I' m not sure if it was that or the lemon juice that helped, but it stayed great in a covered container for 3 days. Yum! Yum! Yum! Not only does it taste good, I know it's good for me, too! I love the combination of textures and flavors with a bit of a kick from the cayenne pepper. Excellent recipe!

The combination of cayenne pepper, a little sweetness from the apple and the freshness of the parsley all explode in your mouth. My 11year old loved it. She ate it with whole grain bread as a sandwich. Excellent recipe!
