Ingredients

  • 12 corn tortillas
  • 6 ounces Monterey Jack cheese, grated
  • 2 tomatoes, chopped
  • One 15-ounce can black beans, drained and rinsed
  • 1/2 teaspoon coarse salt
  • Juice of 1/2 lime
  • 1 tablespoon safflower or other vegetable oil

Directions

Preheat the oven to 425 degrees with the racks in the upper and lower third positions. Lay out the tortillas on two rimmed baking sheets and scatter the cheese over them. Place in the oven for 1 to 2 minutes to melt the cheese.

Meanwhile, toss the tomatoes, black beans, salt, and lime juice together in a bowl.

Distribute the bean mixture evenly over the melted cheese and roll up the tortillas. Arrange side by side, seam side down, on one baking sheet. Brush the oil over the tops. Bake for 8 minutes, or until golden and crispy.

                AMAZING! My sister in law parents are from Mexico and they have taught her how to make these....hers obviously are terrific!  I am a foodie but I HATE frying anything!  I am sooooo impressed that I want to shout to the world how fab these are...my take on the recipe/  I added garlic and sauted the beans/mashed them with the tomatoes...after the cheese melted on the tortillas (to soften them) I rolled them and then drizzled olive oil on the tops/ flipped them after 8 minutes and cooked them a bit longer till they were super crispy.....I am hoping I can experiment with them and see how well they will warm up for a party~

                My family loved these.  They are going in our weekly rotation.  So easy to make.  Great for a busy week night meal or an after school snack.

                I LOVE this recipe because the flavor up to your own creativity. You can fill these flautas with anything you want! I've made this recipe at least 5 times and every time I'm thoroughly pleased. So, it's become a staple in my house.
                
                I've filled my flautas with leftover chicken breast meat, as well as leftover pot roast meat. ...then I just add a cheese, and some veggies (corn, diced zucchini, spinach leaves), herbs and legumes (pintos, black beans, etc.)

                I saw this on the show today and thought I should try something different. It is a quick and easy lunch to make. Usually you would have these ingredients at home. Mine did not come out that crispy as I thought they would be, but they were really tasty. We did eat them with guacamole as a dip, which was a plus. This is a great healthy choice and I would make it again.
