Directions

Place all ingredients in a medium nonreactive bowl; stir to combine. Cover with plastic wrap and let stand 20 to 30 minutes before serving to allow flavors to combine.

                Delicious!  I saw Emeril make this on Martha this morning with a grilled pork tenderloin.  I served it with grilled shrimp instead because that's what I was planning on having.  I had all the salsa ingredients on hand (except I used cilantro instead of mint).   This was easy to put together and I can't wait to try it with the pork!
