Ingredients

Ingredients

  • 1 small clove garlic Coarse salt 2 tablespoons red-wine vinegar Freshly ground black pepper 3 to 4 tablespoons olive oil

Directions

Place garlic clove in a mortar, along with two large pinches of salt. Using a pestle, grind into a smooth puree. Add vinegar and season with pepper; let stand for 3 minutes.

Whisk in olive oil until an emulsion is formed; season with salt and pepper as needed.

To dress a salad, add about 3/4 of vinaigrette to salad and toss until lightly coated; add more dressing, if necessary.

Martha Stewart Member Rating: Unrated 12/25/2012 I've made this vinaigrette twice because my mother-in-law loves it so much. it is perfect and light and adds a lot of flavor to the salad without making me feel like I'm drenching it in dressing. Perfect!

Martha Stewart Member Rating: Unrated 05/05/2010 Did Alice really need to stick her entire hand into the vinaigrette, taste it, then stick her entire hand into it to taste it again? I thought Martha was going to gag when Alice asked her to taste it. Also, it seems Alice was on something during the show.
