- 1 small clove garlic Coarse salt 2 tablespoons red-wine vinegar Freshly ground black pepper 3 to 4 tablespoons olive oil
Directions
Place garlic clove in a mortar, along with two large pinches of salt. Using a pestle, grind into a smooth puree. Add vinegar and season with pepper; let stand for 3 minutes.
Whisk in olive oil until an emulsion is formed; season with salt and pepper as needed.
To dress a salad, add about 3/4 of vinaigrette to salad and toss until lightly coated; add more dressing, if necessary.

Martha Stewart Member Rating: Unrated 12/25/2012 I've made this vinaigrette twice because my mother-in-law loves it so much. it is perfect and light and adds a lot of flavor to the salad without making me feel like I'm drenching it in dressing. I’ve made this vinaigrette twice because my mother-in-law loves it so much. it is perfect and light and adds a lot of flavor to the salad without making me feel like I’m drenching it in dressing. Perfect!

Did Alice really need to stick her entire hand into the vinaigrette, taste it, then stick her entire hand into it to taste it again? I thought Martha was going to gag when Alice asked her to taste it. Also, it seems Alice was on something during the show.
