- 5 cups pecan halves
- 1/2 cup sugar
- 2 teaspoons salt
- 1 teaspoon ground ginger
- 2 tablespoons honey
- 2 teaspoons canola oil
Directions
Preheat the oven to 325 degrees. Place nuts in a single layer on two rimmed baking sheets. Toast until nuts are fragrant, 10 to 15 minutes, rotating the pans halfway through cooking. Meanwhile, combine sugar, salt, and ginger in a small bowl, and set aside.
Combine honey, 2 tablespoons water, and oil in a large saucepan, and bring to a boil over high heat. Reduce the heat to medium, and add roasted pecans. Cook, stirring once or twice, until all of the liquid has evaporated, 3 to 5 minutes. Transfer mixture to a bowl, add sugar mixture, and toss until well combined. Spread nuts in a single layer on a sheet of parchment paper to cool. These pecans may be kept in an airtight container at room temperature for 1 week.

I make these pecans every year at Christmas for friends, family and for us. I always get lots of compliments on them, such as "Fantastic", "Addictive", "Great on ice cream". A friend of mine who passed 8 years ago was the first one to serve these to me and gave me the recipe. She was a true gourmet and an excellent cook. I still think of her every year when I make them, which is a characteristic in my favorite things to cook, ie when they remind me of someone I love. Enjoy!!!

These are amazing and the flavors aren't overwhelming... which is why I ate probably 2 cups by myself! So easy to make too and a simple to throw together either last minute or while you're baking something else. One of my faves.

Fabulous! Everyone enjoy's them. We made them once to sell at a craft sale. They also make a fine hostess gift.

I am not much of a nut person but I tried these at a friend's house and couldn't stop eating them! I've made them several times since and they always go over well. Perfect combination of salty and sweet, and so easy to make.
