Directions

For the batter, whisk together flour, baking powder, baking soda, salt, ginger, cinnamon, cloves, and nutmeg. Add eggs, molasses, and buttermilk and stir until just combined. Cook pancakes on a hot griddle.

We loved that they are not overly sweet, so with maple syrup (from our family in New Hampshire, not Vermont!), they are exactly the right amount of sweet and spice. I generally do everything from scratch, but I received a pancake spice mix from our New England relatives, which was good, but this recipe is so very much better. I just threw out the rest of the container of the mix. This will now be my only version of this recipe.

Yummy and easy Not to sweet perfect for real Maple Syrup…
