Makes enough for 6 four-inch tartlets
Ingredients
Ingredients
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup (1 stick) chilled unsalted butter, cut into small pieces
- 1 tablespoon fresh thyme leaves
- 3 tablespoons ice water
Directions
In a food processor, pulse the flour and salt to combine. Add the butter, and process until mixture resembles coarse meal, about 10 seconds. Add the thyme, and pulse a few times.
With machine running, add the ice water through the feed tube in a slow, steady stream until the dough just holds together. Do not overmix.
Turn out dough onto a clean work surface. Flatten into a disk. Wrap in plastic; chill at least 30 minutes or overnight.
