Ingredients
Ingredients
- 10 tablespoons (1 1/4 sticks) unsalted butter, melted, plus more for pan
- 1/2 cup all-purpose flour, plus more for pan
- 1/2 cup cake flour, not self-rising
- 1 pinch of table salt
- 2 large eggs
- 2/3 cup sugar
- 1 teaspoon pure vanilla extract
- Grated zest of 1 lemon
- Confectioners’ sugar, for dusting
Directions
Preheat oven to 375 degrees. Butter and lightly flour madeleine pan. In medium bowl, whisk both flours and salt together. In bowl of an electric mixer with whisk attachment, beat eggs and sugar together. Add vanilla and lemon zest, then flour mixture; beat until just combined. On low speed, pour in melted butter in a steady stream; mix until incorporated.
Spoon rounded tablespoon batter into each form. Bake 5 minutes; reduce oven to 350 degrees. Bake until golden, 8 to 10 minutes more. Let cool slightly; remove from pan. Dust with confectioners’ sugar, and serve.

These are just wonderful! I love to let them cook a few extra minutes so that the edges get the golden, crunchy, crust of butter. I have not met a single person that does not LOVE these when I make them!

If in the Bay Area or Seattle, go to "Daiso", the Japanese dollar store. This is a chain store with madeleine pans (6-per) for $1.50 each. http://www.daiso-sangyo.co.jp/english/storeinfo/usa.html for locations. I shopped there...and then forgot to pick some up before I left!

These were easy to make and the flavor was good, not great. I've made madeleines before that were much lighter than these. I found them a bit more dense that I expected. Overall I'll keep looking for the perfect madeleine recipe.

Look online for madeleine pans at Williams-Sonoma, Sur La Table or Fantes for traditional pans or scallop shaped pans. Also do a Google search for madeleine pans, madeleine tins or madeleine shell pans or even shell pans for other resources.

I couldn't find a guide either. To prepare the pans, use a pastry brush (or even a dry paper towel) and brush softened butter into all the crevices of the pan. Then sprinkle in some flour and tap off the excess. Pans can be purchased in most department stores. I know Target has them, so does Michael's, Crate
