Ingredients

  • Nonstick cooking spray
  • 1 cup smooth almond butter
  • 1/3 cup honey
  • 1 stick unsalted butter
  • 2 cups rolled old-fashioned oats
  • 1/2 cup chopped toasted almonds
  • 6 ounces bittersweet chocolate, chopped (about 1 1/4 cups)
  • 3/4 cup raisins
  • 1/2 teaspoon coarse salt

Directions

Coat an 8-inch square baking pan with cooking spray. Line with parchment, leaving 2 inches of overhang on 2 sides. Melt almond butter, honey, and butter in a saucepan over medium heat, stirring frequently, about 6 minutes. Remove from heat and add remaining ingredients, stirring until chocolate has melted and ingredients are well combined.

Pour mixture into prepared pan. Refrigerate until chocolate hardens, at least 3 hours and up to 1 day. Run a knife around edges, then use parchment to remove from pan and transfer to a cutting board. Cut into 24 bars, 3 across one side and 8 down other. Bars can be stored in refrigerator up to 3 days.

                I LOVED this recipe! It was so easy to make, especially during the summer! Chocolate and Almond Butter are two of my favorite things in the world, and these bars combine the two into a delish treat that I can feel good about eating.

                I absolutely LOVE this recipe. I haven't stopped making it since I first saw and tried the recipe. And everyone who has tasted it, first of all couldn't believe it was homemade, then they asked for the recipe. My husband isn't a big chocolate fan, so when I make it I usually make one batch with the chocolate, and one without, but then, I find he eats the chocolate ones, too. I really enjoy these energy bars, and they're something I can eat and feel good about what I'm putting in my body.

                I made these last night but substituted dried cranberries for the raisins since I don't like raisins in anything.  They came out great and I cut them into 3/4"-1" squares so that they were bite-sized and brought them into work.  They have receied many compliments and are going quickly.  Will definitely be making these again!  Thanks.

                I have a question.  The bars only keep three days in the fridge?  That's a lot of bars for one person to eat in three days.  Any suggestions?
