- 1 small red onion (about 4 ounces), sliced crosswise as thinly as possible
- 3 tablespoons fresh lemon juice

Directions
Toss together onion and lemon juice in a small bowl and let marinate at room temperature for 20 to 30 minutes. Drain onions in a colander. Return to bowl and toss with salt, pepper, and cilantro.
