Ingredients

Ingredients

  • 1/4 cup all-purpose flour 1 pork tenderloin, cut into 1-inch slices and each pounded 1/4 inch thick Coarse salt and pepper 3 tablespoons olive oil, divided 2 large shallots, thinly sliced (about 1 cup) 1/4 cup dry red wine 1/4 cup chicken broth 2 cups frozen cherries, thawed (12 ounces) 2 teaspoons finely grated peeled fresh ginger Cooked polenta, for serving

Directions

Place flour in a shallow dish. Season pork with salt and pepper, then coat with flour, shaking off excess.

In a large skillet, heat 1 tablespoon oil over medium-high. Working in batches, cook pork until browned and cooked through, about 2 minutes per side. Transfer to a plate and tent loosely with foil.

Add remaining 2 tablespoons oil and shallots, and cook until softened, 6 to 8 minutes. Season. Add wine and broth and cook, stirring, until reduced by half, about 3 minutes. Add cherries and ginger and cook until softened, about 2 minutes. Return pork to pan along with any accumulated juices and cook until sauce has thickened slightly, 2 minutes. Serve over polenta.

Martha Stewart Member Rating: 5 stars 01/14/2014 I made this tonight and served this over white rice. We loved the recipe. I would gladly served this to company. It was fast, easy and delicious.

Martha Stewart Member Rating: Unrated 11/29/2013 I made this dish the other night and invited our neighbors to join us for dinner. It smelled great while cooking, looked great, but it was horrible. Not one of us finished our dinner. It was very bland and the polenta made it even worse. What a disappointment.

Martha Stewart Member Rating: Unrated 11/21/2013 My problem is I can't even view the video each day. It never allows me to do so. Something is wrong with this website and needs to be fixed. I am surprised at Martha Stewart letting this happen. Please do something about this. I always looked forward to the Everyday Cooking recipes with Sara.

Martha Stewart Member Rating: Unrated 11/21/2013 Definitely will try the recipe........but, agree with the previous reviewer. The lengthy ad in the middle of the print version of the recipe is annoying (as I am a PRINT subscriber for years!) and very wasteful of paper and printer ink!!

Martha Stewart Member Rating: Unrated 11/21/2013 The recipe sounds great but in order to print it a pop-up of "subscribe today" came up in the middle and printed along with the recipe. Will never print another recipe if this continues. If I can't print recipes, what the point of staying with this site??
