- 3/4 cup Arborio rice, rinsed 6 cups whole milk 1/2 vanilla bean, split and scraped 1/2 cup sugar Pinch of salt 1/4 cup heavy cream 1 teaspoon freshly grated orange zest
Directions
In a medium saucepan, combine rice, milk, vanilla bean and seeds, sugar, and salt. Bring to a boil over medium-high heat; reduce heat and simmer, stirring frequently, until rice is tender and liquid has absorbed, about 40 to 45 minutes.
Remove vanilla bean; stir in orange zest and heavy cream. Rice pudding may be served at room temperature or chilled.

I found after a few tries that if I bring it to a very high boil and leave it for about 30 seconds then bring it down to simmer, I don't have any issues with the water not absorbing into the rice. The only glitch I had was the liquid soaking into the rice. It took longer than the 40-45 mins. Excellent recipe. Not only is this the easiest rice pudding I have ever made it is the best. So flavorful and creamy. Most recipes call for soaking the rice (and raisins if you are using them). It is true! This rice pudding is the best! My hubby said it was the best he had ever tasted. However, I took it a step further and whipped up some whip cream with confectioners sugar. I then put that on top and sprinkled cinnamon over it. So yummy!
