  • 1 bone-in, skin-on chicken breast half, about 10 ounces Coarse salt and freshly ground black pepper

Directions

Preheat oven to 375 degrees.

Season chicken with salt and pepper. Transfer to a baking sheet fitted with a wire rack and cook until an instant-read thermometer inserted into the thickest part, without touching the bone, reads 165 degrees, 30 to 35 minutes.

Transfer to a cutting board and rest, covered with foil, for 15 minutes before slicing.

    Martha Stewart Member     Rating: 5 stars       10/14/2017   I've made chicken this way forever. The only way to go! So simple, toss in oven and take a shower while it bakes or chop up some fresh veggies and roast some potatoes along with the chicken, then get in th he shower.

I now use this for adding to "chicken and noodles" instead of boiled chicken. What a difference! Any time if need cooked chicken, this is it.... chicken salad, chicken sandwich, soup, etc. Thought I was the only one who could tell the difference, but friends wanted to know what my recipe was. If your recipe calls for cooked chicken, try this.
