Smoky Potato Salad with Sherry Vinaigrette

Ingredients

  • 1 pound small new potatoes, halved if large
  • Coarse salt and freshly ground pepper
  • 2 teaspoons sherry vinegar
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon sweet smoked paprika
  • Sliced scallions, for garnish

Directions

Boil potatoes in a large pot of salted water until fork-tender, 10 to 12 minutes. Drain and immediately toss with vinegar, oil, and paprika; season with salt and pepper. Let cool to room temperature, stirring occasionally. Serve, sprinkled with scallions.
