  • 1/3 cup sweetened cream of coconut
  • 2 cups cubed pineapple
  • 1 tablespoon fresh lemon juice
  • 1 cup ice cubes

Directions

Put cream of coconut, pineapple, lemon juice, and ice into the pitcher of a blender, and blend for 15 seconds on high speed. (Always put the top on the container before processing.) Stop machine, and stir ingredients with a long wooden spoon. Blend for 15 seconds more on high speed.

                So easy and delicious. I make it all the time. I use the bags of frozen pineapple then add a little water.
