Ingredients

- 1/2 cup canola oil, plus more for pans

- 1/4 cup potato starch
- 2 tablespoons arrowroot
- 1 cup unrefined sugar or 10 tablespoons plus 2 teaspoons agave nectar
- 2 1/4 teaspoons baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon xanthan gum
- 1 teaspoon salt
- 1/2 cup unsweetened cocoa powder
- 1/2 cup store-bought unsweetened applesauce
- 2 tablespoons pure vanilla extract
- 1/2 cup brewed coffee or hot water
- 2 cups vegan gluten-free chocolate chips, such as Tropical Source
Directions
Preheat oven to 325 degrees. Brush 3 dozen mini-muffin pans with oil; set aside.
In a medium bowl, whisk together flour, potato starch, arrowroot, sugar, baking powder, baking soda, xanthan gum, salt, and unsweetened cocoa powder; set aside. In a large bowl, mix together applesauce, 1/2 cup canola oil, and vanilla. Slowly add flour mixture, stirring to combine. Stir in coffee until it forms a batter. Fold in chocolate chips.
Place 1 tablespoon batter into each prepared muffin cup. Transfer muffin pans to oven, and bake until a toothpick inserted into the center comes out clean, 12 to 15 minutes. Let cool completely on a wire rack before unmolding.

This sounds great, although I have not made it thus far. It is alarming that it calls for Canola Oil, which is one of the worst oils you can use. As well as Xanthan Gum, is not a healthy product. It's been known to cause intestinal issue and other problems. That's contradictory to the fact that this recipe is suppose to be gluten free. Since it's been stated that gluten causes intestinal problems. Food for thought.

Can be made for those with corn allergies as well if you use a baking powder with potato starch instead of cornstarch

These rock! We had some friends over with their small children, and the kids LOVED the brownies. I was also lucky enough to visit Baby Cakes in NYC... all of her stuff is amazing! So nice to have gluten free that isn't gummy!

I can't have potato starch or arrowroot or cornstarch. Can I use tapioca flour or something else?

Instead of bean flours, I substituted with 3/8 cup of sweet sorghum flour, 3/8 cup white rice flour, and 2 tablespoons corn starch and the recipe turned out wonderfully!

I have an anemia that does not allow me to eat fava beans which is in garfava and fava flour. Has anyone used a substitute that is still gluten free?

Diago... I too am allergic to wheat, rye, oats and barley... I think you can find the garbanzo flour at health food stores. They usually have a variety of different type of gluten free flours. Goodluck!
